Fabulous Gluten-Free Flour Tortillas

Finally, a fresh gluten-free flour tortilla that isn’t hard, flavorless, or gummy! I think they taste like Chevy’s fresh flour tortillas, and the reviews I’ve gotten so far are pretty darn good. The recipe is a mix of a bunch of different recipes I’ve found in my travels. These are friggin’ delicious.

1 c white rice flour

1/3 c sorghum flour

1/3 c potato starch

1/3 c tapioca flour

2 tsp xanthan gum

1 tsp baking powder

1 1/4 tsp salt

1/2 tsp sugar

2 Tbl vegetable shortening

3/4 – 1 c warm water

In a large bowl combine dry ingredients and whisk to combine. Add in shortening and combine – use your hands for this step! Add warm water a bit at a time to create a ball of dough (yes, that’s right – a ball – unlike most gluten-free dough). Heat a skillet, griddle, cast iron pan, whatever you have. Meanwhile, pull off a golf ball sized piece of dough, and sprinkle it with potato starch (or whatever starch you’d like to use). Then the fun part: roll the ball out into the thinnest circle you can get between two pieces of parchment paper. Or, if you have a nonstick rolling pin, roll out on one piece of parchment (it will help you flip it into the pan in one piece).

Next, flip the rolled tortilla into the hot pan (or whatever you are using). Peel the parchment off and repeat. The tortillas only need about one or two minutes per side and are best when they are fresh! Mine weren’t the most uniform or prettiest tortillas ever, but they did the trick.

I haven’t tried freezing them yet, but so far they are good right out of the fridge, microwaved for about 15 seconds. Yum! I made mine into delicious quesadillas with bacon and sriracha hot sauce. Man were those good.
