Quick Greek Salad

I’m not sure if this even counts as a salad really, but it was delicious on my flatbread with grilled chicken and hummus! It took all of a minute to throw it together, which makes it even better.

Here we go:

1 cucumber, peeled and sliced into bite-size pieces

1 c grape or cherry tomatoes, halved

1/2 a red onion, thinkly sliced

1 clove garlic, minced

1/4 c red wine vinegar

1/2 c feta (or more if you love it like I do)

Salt and pepper

Toss ingredients in a bowl and chill. See, could not be easier. I also added a bit of rice vinegar because my red wine vinegar was old and tasted a bit funky. You could add oregano, mint, lemon zest, or olive oil and it would all be good. It was quite delicious with hummus and flatbread just as it stands, though.
